Room Spotlight

The Marshdale

This room is our hidden treasure! It's themed after the original owners as well as where the town of Marshdale received its name.The original owners from the 1920's, who's names are Dr.Wilber Marsh and his wife Mary, nicknamed "Dale", settled here and started a life and the lodge.
There is also a hand painted chest made by Margo Carter from the local shop "Imagine That".
This chest completes the theme in this lovely room as we show where "old history meets new". Imagine That Boutique is located a stone's throw across the road from the Bears Inn

Bears Inn
No Butter, No Egg
Hollandaise Sauce


Makes 4 Servings

With the ever-increasing concern for health and wellness, I felt the need to share my newest addition for those people trying to watch their saturated fat intake. Enjoy!

Ingredients:

½ cup silken tofu
2 T lemon juice
2 tsp nutritional yeast
1/8 tsp cayenne pepper
1/8 tsp turmeric
2 T olive oil


Classic hollandaise sauce is mostly egg yolks and butter (with a few seasonings thrown in), making it one of the worst offenders for saturated fat.  Streamed silken tofu gives you the same creamy consistency and there's no worry about the sauce curdling or turning. This version can be made ahead and reheated by stirring over low heat just until warm or microwaved on low.

Directions: Heat tofu on plate in microwave 30-45 seconds, or until warmed through. Transfer to blender, and puree until smooth.  Add lemon juice, nutritional yeast, cayenne pepper and turmeric; pulse until well combined.  With blender running, add oil in steady stream to finish sauce. Pour over desired dish.

Dale Tolan is our right hand at the Inn, helping with all our maintenance & creative projects. He is truly a blessing! Dale has been dependable & tolerant of all our many, sometimes unusual requests!
He's here every Tuesday & I never worry that he will leave a project unfinished. He does everything from minor plumbing & electrical repairs to painting, to vacuum cleaner repair, to making cornice boards in our newly finished Happy Trails room. He's our best critic on new cookie recipes as well! If there's ever a project that puzzles Dale, one of his fellow volunteer firefighters comes to our aid. One day Dale brought his grandson to work on "bring your child to work day" and I couldn't resist taking the photo below. Dale has been with us for nearly four years is an important part of the Inn family.
