Composting at Bears Inn

Composting in the mountains became a little difficult by late summer.Upstairs guests reported the composts bin being attached and shredded by a bear one night in August, and were most entertained! Enter Charlotte and Wilbur, the resident pigs at TaTonka Farms.  I am greeted by Jake the dog, turkeys, sheep, chickens, rabbits and the pigs, of course! I usually visit once or twice a week, to provide gourmet leftovers. Everybody wins with this arrangement - we feel good about it at the Inn, and we know by the sounds and behavior of the animals, they like it, too! This great nursery, located off Highway 73, between Evergreen and Conifer provides mountain grown plants adding beautiful color to the community. At this altitude, plants need all the help they can get, and Tatonka Farms gives them a great start. Followers of Patti, place their orders in the fall for fantastic blooms in spring. Their pointsetta season begins November 16 - don't miss placing your order for the holidays.

Bears Inn Baked Pumpkin

Makes 1 serving, multiply as needed.
Preheat oven to 300 degrees.

1 minature sugar or pie pumpkin
1/2 tsp of butter
2 tsp chopped pecans, more or less
Dried fruit mix: dried mangoes, cranberries, pineapple, apples, prunes and or raisins. Experiment!

1. Wash and dry the pumpkin. With a sharp knife, cut the stem out similar, but leaving enough of the flesh to replace it.

2. Clean seeds and any strings out of the cavity.

3. Put butter, nuts and dried fruit or you choice in the cavity. Put the top back on the pumpkin.

4. Place the pumpkin in a baking dish with about 1/2 inch of water in the bottom of the pan.

November finds us enjoying a cripness in the air! After a beautiful, warm fall we are looking forward to the holidays. To celebrate we have been serving baked apples and pumpkins and warm cider by the fireplaces. The clear, starry nights have been magical. If you find yourself needing to bolster your strength for the busy season ahead, come join us for a night or the weekend. The mountains are wrapping us in good holiday cheer and we would love to share it with you.
