This local event is benefitting the Mountain Area Fire Fighters and Blue Spruce Kiwanis Foundation and features a chili cook-off competition, live music and entertainment, the ever popular Firefighters Challenge Competition and a juried Art Show.

Bears Inn Baked Apples


A nice breakfast fruit or a wonderful fall dessert with cinnamon or caramel ice cream.

Ingredients:

- 1 Apple per person. Tart apples are better

  for baking as they maintain their shapes.

  Sweeter apples tend to become mushy, I

  prefer Granny Smith or Gala Apples.

- Quality Breakfast Cereal such as

  Post Select

- Nutmeg or Cinnamon or Apple Pie Spice

- Melted butter

- Lemon Juice

            - Cinnamon Sticks (optional)

Directions:


1. Pulverize breakfast cereal in blender or food processor & mix with your spice of choice. 2. Peel and core apples leaving a base on the bottom side to hold filling. 3. Flatten bottom so apple sits upright.
4. Brushing apples with lemon juice prevents them from turning brown. 5. Brush each apple with melted butter. 6. Coat outsides of apple with cereal-spice mixture. 7. Put additional cereal filling and a cinnamon stick in the hollow core and a dab of butter if you choose. 8. Bake in a glass pan with about ½ '' of hot water for about 1 - 1 ½ hours at 350 degrees.
9. Check for doneness as apple varieties vary in their baking times. Serve immediately or refrigerate overnight and reheat for serving.

Tip: A nice presentation is on a plate in a puddle of vanilla yogurt with a few colorful berries.

After a busy summer, the aspen season will be starting very soon. Here is my suggestion for a wonderful leaf viewing drive that will avoid heavy traffic patterns.

Upper Bear Creek Loop
Start at Evergreen Lake, going west on Upper Bear Creek Rd. for 4.5 miles, turn right on Witter Gulch Rd., continue for about 5 miles. The last mile or so is dirt. At the dead end turn right on Hwy 103 for 6 miles to return to Evergreen Parkway. Less than one hour. Nice views of Mount Evans, and mountain estates along Upper Bear Creek.


I've had hundreds & hundreds of requests for a cook book & it's finally coming together! If all goes as scheduled, it should be available the first of November.  I'll send an announcement when it's ready. Keep it in mind for holiday gift giving! 
It will contain about 50-60 recipes we frequently use at the Inn.
